This sake is clad in the splendor that is unique to Yamada-Nishiki brewers' rice. Its elegant taste has a graceful sweetness to it that allows for a silky drinking experience. When it is warmed ("kan"), a touch of bitterness serves to delineate the flavor and increase the acidity, thus enticing your appetite.
Served with a dish of boiled asparagus with hollandaise sauce may allow you to sense the sake's body and depth as well. Also adding a splash of balsamico on the hollandaise may help unravel its innate sweetness. Matching with sea bream carpaccio, pumpkin gratin, or chicken and Japanese radish dishes in marinara sauce are other recommendations.
Try tasting this sake also when cooled down after warmed ("kan-zamashi") to sense the fruity, pear-like aroma.

This sake is slightly on the dry side and crisp. Your nose will sense a rice and koji aroma. It also has a slightly oily and nutty aftertaste. The maturation period for this sake makes it quite nice. The combination of this sake at a warm temperature around 45℃ and boiled broccoli dressed with roasted salmon chips is one that would cater to even the shrewdest palate.
